How to use up leftover pumpkin puree |

It’s OFFICIALLY fall and that means all things pumpkin. Stock up on those cans of pumpkin puree!

Raise your hand if you’ve bought a can of pumpkin puree to use in a recipe and ended up with leftovers?? Yup, you’re not alone. Today I’m sharing a round up of OVER 30 recipes from dietitians to use up leftover pumpkin puree, from pumpkin desserts, breakfast, and savory recipes. First let’s answer a couple questions all about pumpkin puree and how to use it (and what makes a good substitute.) 

What is pumpkin puree?? What is in pumpkin puree?

Pumpkin puree can be labeled as 100% pure pumpkin, pumpkin puree, solid pack pumpkin, or simply “pumpkin.” But most of the time it’s actually a combination of pumpkin and various types of squash.  Most of the squashes are less stringy and richer in sweetness and color than pumpkin. I have used sweet potato and butternut squash interchangeably for pumpkin in several recipes in the past and have had successful tasting results. 

Are canned pumpkin and pumpkin puree the same thing?

Yes! Just make sure the canned pumpkin is NOT pumpkin pie filling. You can also you roast a whole pumpkin and then puree it in a blender or food processor. Chopping up a pumpkin is honestly a TON of work so I recommend opting for the canned pumpkin for the recipes shared. There are several recipes available online if you are interested in creating your own pumpkin puree.

Pumpkin Puree Recipes

As I shared these recipes are created by Registered Dietitians so they are mostly of the healthy genre, but overall nutrition will vary. However pumpkin puree itself is packed with vitamins, especially potassium, Vitamin A, and iron.  Pumpkin is also a huge source of fiber which is great for cholesterol lowering, digestion, blood sugars, and overall health.
