Cleaning out our freezer has made room to purchase food when on sale and work on restocking it. My most recent find was a whole pork loin. You might ask…what do you do with a whole pork loin? Until recently, I had no idea…
A whole pork loin is a lot of meat but again another deal I just couldn’t pass up. This pork loin was 9.5 pounds and just over $18. So I watched a couple YouTube videos on how to cut a pork loin and then got to work.
I cut the following:
- 1 – 3lb roast
- 6 pork chops
- 6 thin slices (to make schnitzel)
- 3 – 1 cup portions of stewing pork for stir-fries and kabobs.
Assuming we invite company over for a pork roast, this amount of meat gives two people at least ten meals. Which works out to $1.80 per meal plus your sides. You just can’t beat that!
Our first meal used a package of stewing pork to make oven baked Greek Pork Kabobs. My daughter cooked rice and made a simple salad to complete our meal.
Greek Marinade
Mix the following into a bowl:
- 1 tbsp. vegetable oil
- 1-2 tsp lemon juice (I used a tablespoon but my daughter thought it was to lemony).
- 1 clove of minced garlic
- 1 tsp. Dijon mustard
- 1/2 tsp. dried parsley
- 1/4 tsp. dried oregano
- 1/4 tsp. dried thyme
- 1/4 tsp. dried rosemary
- 1/8 tsp. ground black pepper
- add your meat to the marinade and mix until all is covered.
- Marinate for at least 1 hour in the fridge. I marinated the pork for the day.
- Also, soak your skewers in water for at least 30 minutes to help prevent them from burning.
- Preheat oven to 375 F.
- Place meat on the skewers and on to a baking dish or pan.
- Bake for abut 20 minutes, until the internal temperature of the meat is 71 C (160 F).
